Colombia. Industrias Refridcol recently launched a digital book called "Guide to the Poultry Cold Chain", which offers different recommendations to optimize the cold processes of a production plant as well as to detect different common errors.
The book, free to download, offers some important topics within the process such as the following: cold chain in the poultry sector, how temperature influences food, scheme of the poultry cold process, optimization of stages of the refrigeration system, chillers, process rooms, freezing tunnel, cold rooms, refrigerated springs, and what my cooling system should look like.
