The opening day of RefriAméricas 2011 ended on Wednesday with a tour of the refrigerator and the beneficiation plant of the Antioquia Livestock Power Plant, in which 13 technicians were able to learn about the processes of slaughter and refrigeration of meat, with the guidance of Álvaro Ramírez, the company's refrigerator.
The visit began with a historical review of the Central, which also functions as a fair, and continued with a tour of the benefit area, where the entire process of benefiting the pigs was analyzed, as well as the treatment of meat in the carcass. With the advice of the coordinators of each area, the visitors learned about the methods of controlling the temperature of the channel during processing and conservation.
Later we visited the refrigeration cellars that have an average temperature of 1ºC, where the meat is matured to reach internal temperatures of 7ºC. Finally, visitors got to know the machine area, which houses refrigeration equipment that works with ammonia.
The Venezuelan José Durán, from the company Plumrose Latinoamericana expressed his satisfaction with the experience. "It is a very good attraction, we want to continue knowing experiences of other companies, hopefully RefriAméricas will continue with this interesting initiative," he said on behalf of the group of attendees.
